Towards Microbial Food Safety of Sprouts: Photodynamic Decontamination of Seeds

The climate crisis is one of the biggest challenges for humanity in 21st century. Production and consumption meat contributes to global warming by causing emissions climate-relevant gases. Freshly grown sprouts are part an alternative, as they less polluting but still a nutritious food. However, warm humid sprouting conditions may cause pathogenic microorganisms thrive. Decontamination methods raw therefore relevant. Photodynamic Inactivation (PDI) novel approach that uses photoactivatable molecules (photosensitisers, PS) visible or near-infrared light produce reactive oxygen species (ROS). These ROS kill oxidative processes. Here, we test application PDI based on sodium-magnesium-chlorophyllin (Chl, approved food additive E140) photo-decontamination mung bean, radish, buckwheat seeds. Seeds were contaminated with Listeria innocua, serving model system monocytogenes, subjected using LED array 395 nm tested remaining bacterial contamination CFU counting. 100 µM Chl reduces load bean radish seeds 99.9% (radiant exposure 56.4 J/cm2 28.2 J/cm2, respectively), <90% reduction after illumination J/cm2. Neither weight nor germination rates affected PDI.
